The story of Spirit of the Deep continues. Join us on Sunday, September 7th, as we unveil the next chapter of our signature whisky, reimagined in collaboration with local distillery Driftwood Spirits. We’ll be joined by some incredible guest bartenders from across the pond—Soren Schepkowski from Mount Pleasant Vintage & Provisions, and Joe Casson from Michelin-starred Published on Main—each bringing their own creative touch to the evening. Even better, 50% of every ticket sold goes to support the Victoria Whisky Festival. As the sun sets over the harbour, enjoy music from our live DJ and raise a glass to this new whisky tradition.

Your ticket gets you a dram of Spirit of the Deep, a signature cocktail from one of our guest bartenders, and plenty of canapés and bites to keep you fueled through the evening.

    Soren Schepkowski has built a career shaping Victoria’s cocktail culture, from Clarke & Co to Wind Cries Mary, where his bar program gained national and international recognition. Now consulting under Soren Andre, he leads Fathom’s creative beverage direction.

  • Adam Bradshaw

    With over 15 years in the industry, Adam Bradshaw has built a career around whisky, from bartending in Edinburgh to distillation in Melbourne. Now Whisky Curator at The Strath in Victoria, he is also founder of Whisky Folk and an ambassador for the Scotch Malt Whisky Society.

  • Joe Casson

    From the UK to Australia, New Zealand, and now Canada, Joe Casson has built a career leading celebrated restaurants, including a Michelin-starred venture in Vancouver. His focus is on creating connections through thoughtful hospitality.
