Join us on January 15th for an exclusive five-course Highland Park whisky dinner crafted by Chef Landon Crawford, designed to showcase the depth, smoke, and heathered sweetness of this iconic Orkney distillery. Founded in 1798 and legally licensed in 1826, Highland Park remains the northernmost single-malt Scotch distillery, famed for its traditional floor-maltings, local heathery peat, and sherry-seasoned oak casks that create its distinctly smoky, complex profile.
We’re thrilled to welcome Adam Ellesmere of Highland Park, who will join Soren to co-host the evening—guiding guests through each pairing, finishing with a spectacular 25-year bioluminescent finale.

Chef Landon Crawford
Born and raised on Vancouver Island, Landon brings a deep local connection and global experience to Fathom’s kitchen. After cultivating his skills in Victoria, he spent several years in Europe, earning a Michelin Star as Chef de Cuisine at Kai-3 in Germany. Landon’s dishes are rooted in seasonality, clean flavors, and thoughtful technique, with a particular focus on seafood and house-made sauces. He is passionate about mentorship, innovation, and fostering close relationships with local suppliers.
