Join us on January 16th for an exclusive evening featuring a menu designed by Chef Diego Jimenez in collaboration with a special guest chef. Each course reflects InchDairnie’s bold, modern approach to flavour. Expect inventive pairings, creative technique, and a guided exploration of the distillery’s boundary-pushing spirit. Founded in 2015 in Glenrothes, Fife, InchDairnie Distillery represents a new era of Lowland whisky-making. Using local Fife barley, outdoor seasonal fermentations, and advanced mash-filter technology, the distillery breaks from tradition to unlock fresh, unexpected flavours.

Chef Diego Jimenez
Born in Bogotá, Colombia, he brings over 13 years of experience, inspired by his parents' culinary careers. Trained at the Gato Dumas Institute, he worked in luxury restaurants before helping open the Grand Hyatt Bogotá. In Canada, he refined his craft at Spirit Ridge Resort, learning indigenous cuisine under Chef Murray McDonald and earning his Red Seal certification. Now at Fathom, he blends global flavors with expert technique to create unforgettable dishes.
